The Chouarra Tannery is near the north-eastern edge of the Medina (old town) in Fez. The whole operation, from raising the animals, procuring their skins, making the leather, and creating leather goods is run as a cooperative of approximately 400 families. The leather is made in much the same way as it has been since the tannery was founded in the 11th century.
